Make Lemon Squares!!





Lemon Squares (or Bars) are a refreshing and easy spring time treat. They are made of a short bread like base, topped with a custardy creamy lemon layer and finished off with powdered sugar. They are sweet and tangy and perfect for any lemon lover.

I personally think they make a lovely light dessert to serve at a barbeque or to take to a potluck, especially because you can make a large amount easily. Just double the recipe for a 9inch by 18inch pan!



Here is the Recipe:

Preheat your Oven to 350 degrees Fahrenheit.

Crust:

1 Cup Flour
1/2 Cup Butter
1/4 Cup Powdered Sugar
Pinch of Salt

Combined into a crumbly mixture and press evenly into a 9 by 9 inch pan. Bake for 20 minutes.

Filling:

4 Eggs
4 Tablespoons Flour
2 Cups Sugar
1/4 Teaspoon Salt
4 to 5 Tablespoons Lemon Juice

Whisk together and pour over the prebaked crust. Put back in oven and bake for an additional 25 minutes.

Remove from oven and top with powdered sugar immediately. Allow to cool before enjoying.
