World War 2 Recipe: Carrot Cake

So I've Seen this post around Pinterest:

Which is one of many old recipes that I have pinned throughout the years. I have always wondered how it would turn out. I haven't seen any photos of people's attempts at it, so I decided I would test it out.






First off, it took about 15minutes to mix up the batter. This time includes grating the carrot by hand. I used one large white carrot, which I believe is the reason why my cake looks extra pale. It doesn't give an amount of water/milk to add also but I would guess I used probably a cup or so to get the right cake batter consistency. The recipe also doesn't give a pan size or a baking time. So I guessed and I can safely say that 35 to 40 minutes in an 8inch by 8inch glass pan worked perfectly for me. 


Now for how it rates on a scale of 1 to 10:

Texture: 8/10
It isn't overly dry or dense, but a substantial cake. it holds up enough to not need a napkin while holding it.
Taste: 7/10
It is not what you think of when you think Carrot Cake but it is a decent cake, it almost has the appeal of a plain scone where it is best enjoyed with tea or coffee.
Baking: 10/10 
It was super easy to make, using only one bowl and a few utensils.




Another mystery for this recipe was where this image comes from. when you reverse image search it, I found it on two non-Pinterest sites and a presentation. But it is unclear on the real origins so here are the three places I found it on:
