Family Recipe: Shortcake

 Our Family's Shortcake Recipe


Spring is finally here and for me there is one dessert that screams spring and summer time, Strawberry Shortcake! Tomorrow you can see the Recipe Video over on my YouTube.

This Short cake recipe is the only one that I can remember my Mom ever making. And it is fantastic. It is a drier cake, with little to no rise, in an almost scone like way. It is also not very sweet but the combination of cream and strawberries with it is heavenly. I have no idea where this recipe originally came from but it is the only one our family has ever known.

So here it is:

1 stick (1/2c) Butter
1/2c Sugar
1 egg
1/3c Milk
1teaspoon vanilla
1/2 teaspoon salt
4teaspoons baking powder
2c flour

Cream together soften butter with the sugar.
Add the egg, milk, and vanilla. Mix well.
Add all the dry ingredients. (I recommend either sifting them together or adding the salt, baking powder to the wet first Mixing well, then adding the flour in batches.)
The dough will be really thick and a bit dry.
Pat it into a square 8inch x 8inch dish in an even layer.
Bake at 350*F for 30 minutes.
Enjoy!

I just top mine with sliced strawberries and whipped cream!
